Hello September,
It's harvest season, so let's prepare this easy yet delicious dish: CHARRED SAUTEED EGGPLANTS & TOMATO.
There's something very special about a traditional dish. This was my second attempt at making this delicious side dish, and it turned out wonderfully. This recipe was handed down from my mami, and it represents a very traditional Dominican approach to cooking this delightful eggplant and tomato.
Traditional Cooking Method: Charred eggplants on stovetop while using a tong.
Time: From Prepping to Cooking it's less than 30 mins.
Taste: Umami, Fresh, Flavor is very adaptable to your seasoning--- BUT IT'S AMAZING!
Health Facts: Good for the bone ( especially if you have any deficiencies). It has an abundance of Calcium, Phosphorous, Potassium, Magnesium, Vitamin K2 and its one of the cleanest veggies out there.
You can serve this as a side dish, for Meatless Mondays, as a dip, or as an appetizer. It's quite similar to baba ghanoush.
